Chipotle Mexican-Style Double Chicken Stew With Buttered Corn & Rice

Before you begin...

This recipe takes around 5-10 min to prep, so get your casserole dish and all your ingredients ready, then wash your fruit and veg

Note: Make sure your dish is oven-proof and safe to use on the hob. Don't have one? Start cooking in a large, wide-based pan then transfer to an oven-proof dish and cover tightly with foil

Now, let's get started!

Preheat the oven to 220°C/ 200°C (fan)/ gas 7, and take your chicken out of the fridge, open the packet and let it air

Heat a large, wide-based hob-safe oven-proof casserole dish with a matching lid with a drizzle of vegetable oil over a medium-high heat

Once hot, add your chicken and cook for 3-4 min on each side

(Doubled your protein? Use 2 pans!)

Meanwhile, boil a kettle, then peel and finely chop (or grate) your garlic

Peel and chop your brown onion[s] into wedges

Once the chicken is lightly browned, add the wedged onion with your ground smoked paprika and ground coriander, your chicken stock mix, chopped garlic and 1 tbsp [1 1/2 tbsp] [2 tbsp] flour, then give it a good mix up and cook for 30 secs

Add your tomato paste and chipotle paste (can't handle the heat? Go easy!) with a generous pinch of salt and pepper and give everything a good mix up

Add 350ml [450ml] [600ml] boiled water and bring to the boil

Once boiling, cover with a lid and put the dish in the oven for 30-35 min or until the chicken is cooked through (no pink meat!) and the sauce has thickened – this is your chicken stew

Meanwhile, reboil a kettle

Add your white long grain rice to an oven-proof dish with 300ml [390ml] [600ml] boiled water, then cover tightly with tin foil and put the dish on a baking tray

Add your sweetcorn cobette[s] to a large piece of tin foil with a pinch of salt and a knob of butter, then scrunch the tin foil around the corn until tightly sealed and add to the other side of the baking tray

Put the tray in the oven for 25-30 min or until the corn is tender and the rice is cooked – this is your baked rice and buttered corn

Use this time to clear up, set the table, have a cup of tea or simply chill!

Once the chicken stew is ready, remove the dish from the oven

Roll your lime[s] with your hand on a hard surface (to release more juice) and cut in half, then add a generous squeeze of lime juice to the stew and give it a good mix up

Set aside for 2-3 min for the flavours to develop – this is your chipotle Mexican-style chicken stew

Serve the chipotle Mexican-style chicken stew with the baked rice and buttered corn to the side

Cut the remaining lime into 1 wedge per person and garnish with a lime wedge

Dig in!
