Chimichurri Rump Steak With Charred Vegetables & Herby Garlic Wedges
Stake your claim on this Argentinian-style sizzler. You'll pan-fry juicy rump steak to pair with zesty homemade chimichurri, charred veggies and garlic-herb wedges. Finish with a dunk of chimichurri mayo and get stuck in.

Before you start cooking, take your steak out of the fridge, open the packet and let it adjust to room temperature
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Cut your potatoes (skins on) into wedges
Deseed your pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into wedges

Top, tail and chop your courgette[s] into strips, lengthways
Peel and chop your red onion[s] into wedges
Peel and finely chop (or grate) your garlic
Cut your red chilli[es] in half lengthways, deseed (scrape the seeds out with a teaspoon) and chop finely

Add the potato wedges to a baking paper-lined baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt and pepper
On a separate baking paper-lined baking tray, add the pepper wedges, courgette strips and onion wedges
Add half of the chopped garlic, half your dried oregano and half the chopped chilli (you'll use the rest later!) to the veg tray with a pinch of salt and pepper and give everything a good mix up
Put the trays in the oven for 25-30 min or until golden

While everything is cooking, chop your coriander and parsley roughly, including the stalks, add 3/4 the chopped herbs (you'll use the rest later!) to a pestle & mortar and grind to a paste, add 1 1/2 tbsp [2 tbsp] [2 1/2 tbsp] olive oil, the remaining chopped chilli, remaining dried oregano, your red wine vinegar and a generous pinch of salt and pepper – this is your chimichurri
Tip: If you don't have a pestle & mortar, chop the herbs very finely
Combine half the chimichurri with your mayo – this is your chimichurri mayo

When everything is nearly ready, heat a large, wide-based pan (preferably non-stick) over a high heat
Pat your steak[s] dry with kitchen paper, then drizzle them with vegetable oil and season with a pinch of salt on both sides

Once very hot, add the steak[s] to the pan
For rare, cook for 2-3 min max on each side; for medium-rare, cook for 3-4 min on each side; for medium, cook for 4-5 min on each side
Once the steak[s] is cooked, transfer to a plate to rest
Slice the rested steak finely on a clean board

Once cooked, remove everything from the oven
Toss the remaining chopped herbs and remaining grated garlic through the wedges – these are your herby garlic wedges

Serve the sliced steak with the herby garlic wedges and chilli roasted vegetables to the side
Drizzle the remaining chimichurri over the steak
Serve the chimichurri mayo to the side for dipping
