Cooking instructions

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Cut your potatoes (skins on) into fries

Add the fries to a baking paper-lined baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt and pepper

Give everything a good mix up and put the tray[s] in the oven for 20-25 min or until golden and crisp

Cut your green chilli[es] in half lengthways and deseed (scrape the seeds out with a teaspoon)

Heat a large, wide-based pan (preferably non-stick) with a little drizzle of vegetable oil over a high heat

Once hot, add the chopped chilli and cook for 1-2 min on each side or until lightly charred (reserve the pan!)

Combine your mince in a bowl with your ground smoked paprika, beef stock mix and a pinch of salt and pepper

Mix until combined, then equally divide and shape into 2 meatballs per person

Cover the meatballs with a sheet of baking paper and roll them out to approx. 0.5cm thickness with a rolling pin until evenly flattened – these are your patties

Slice half your tomato[es] into rounds

Chop the remaining tomato[es] into bite-sized pieces

Chop the charred chilli finely

Combine your chopped chilli and soft cheese with a pinch of salt and pepper and a splash of cold water – this is your green chilli popper sauce

Wash your salad, then pat dry with kitchen paper

Combine your white wine vinegar with 1 tbsp [1 1/2 tbsp] [2 tbsp] olive oil and a pinch of salt and pepper in a large bowl – this is your dressing

Add your salad and chopped tomato to the bowl and give everything a gentle mix – this is your dressed salad

Return the reserved pan to a high heat with a drizzle of vegetable oil

Once hot, add the patties, press them down very firmly with a spatula and cook for 4-5 min on one side then flip and cook for 3-4 min the other side, pressing down continuously, or until slightly charred and cooked through (no pink meat!) – these are your smashed patties

Slice your brioche bun[s] in half (if required!)

Remove the tray[s] from the oven and place the brioche halves (cut side up!) on top of the fries

Return the tray[s] to the oven for 2-3 min or until warmed through

To build the burger, top the warmed brioche base with the sliced tomato, a smashed patty, some of the green chilli popper sauce, the remaining smashed patty, the remaining green chilli popper sauce, a drizzle of sriracha and the warmed brioche lid – this is your green chilli popper smash burger

Serve the dressed salad and fries to the side
