Cheesy Topped BBQ Beef Brisket Burger W. Corn & Sweet Potato Wedges
Dig into slow-cooked beef brisket, smothered in smoky BBQ sauce in a soft brioche bun and topped with melty cheddar and herby garlic butter. Served with sweet potato wedges, buttery corn on the cob and a punchy BBQ mayo for dunking.

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Peel and finely chop (or grate) your garlic

Add your slow cooked beef brisket and any juices to an oven-proof dish (or two!) with your tomato paste, BBQ sauce, half your ground smoked paprika, half the chopped garlic (save the rest for later!) and 3 tbsp [4 1/2 tbsp] [6 tbsp] cold water
Season with a pinch of sugar and a pinch of salt and pepper
Cover the dish[es] with tin foil and put in the oven for an initial 40 min or until tender

Meanwhile, cut your potato[es] (skins on) into wedges
Add the wedges to one side of a baking tray (or two!) with a small drizzle of vegetable oil and the remaining ground smoked paprika
Season with a small pinch of salt and give everything a good mix up – these are your paprika wedges

Add your sweetcorn cobette[s] to a large piece of tin foil with a splash of cold water
Scrunch the tin foil around the corn until tightly sealed and add to the other side of the baking tray[s]
Put the tray[s] in the oven for 20-25 min or until the wedges are golden and the corn is tender

While everything is cooking, grate your cheddar cheese
Trim, then slice your spring onion[s]
Chop your coriander finely, including the stalks (save some whole leaves for garnish!)
Add a knob of butter to a small bowl and microwave for 30 secs or until melted, once melted, add your chopped coriander to the bowl with the remaining chopped garlic and mix it all together – this is your herby garlic butter

Once the beef has had an initial 40 min, remove the dish[es] from the oven and set aside a splash of cooking liquid to a small bowl
Pull the meat apart using two forks – this is your BBQ pulled beef brisket
Add your mayo to the bowl with the reserved cooking liquid and mix until fully combined – this is your BBQ mayo
Slice your brioche bun[s] in half (if required!)

Add the BBQ pulled beef brisket to the brioche base and top with half the grated cheese, the sliced spring onion and some of the coriander leaves (you'll use the rest later!)
Top with a brioche lid and drizzle half your herby garlic butter (save the rest for garnish!) over the top
Top with the remaining grated cheese and put the tray in the oven for 4-5 min or until the cheese has melted – this is your cheesy topped BBQ beef brisket burger

Serve the cheesy topped BBQ beef brisket burger with the paprika wedges, corn and BBQ mayo to the side
Drizzle the remaining herby garlic butter over the corn and garnish with any remaining coriander leaves
