Char Siu Double Chicken Breast Caesar Salad

Flour, Olive oil, Pepper, Salt, Vegetable oil (or dietary alternatives)

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Add your diced chicken to a bowl with a drizzle of vegetable oil and give everything a good mix up

Add 2 tbsp [3 tbsp] [4 tbsp] flour and a pinch of salt and pepper and give everything a good mix up or until fully coated – this is your floured chicken

Heat a large, wide-based pan (preferably non-stick) with a generous drizzle of vegetable oil over a high heat

Once hot, add your floured chicken and cook for 5-6 min on each side or until golden, crispy and cooked through (no pink meat!)

Tear your ciabatta[s] into bite-sized pieces and add them to a baking paper-lined baking tray with a drizzle of olive oil and a pinch of salt and pepper

Put the tray in the oven for 6-7 min or until golden and crisp – these are your ciabatta croutons

Cut your cucumber in half lengthways, then slice finely

Wash your lettuce, then pat it dry with kitchen paper

Tear the outer lettuce leaves into rough bite-sized pieces

Shred the lettuce inner core[s]

Peel and finely grate (don't chop!) your garlic

Add your mayo, grated garlic and most of the grated Italian hard cheese (save the rest for later!) to a large bowl with your white wine vinegar, 1 tbsp [1 1/2 tbsp] [2 tbsp] olive oil and a pinch of salt and pepper

Give everything a good mix up – this is your Caesar dressing

Add the sliced cucumber, torn lettuce and shredded inner core[s] to the Caesar dressing

Gently toss it all together – this is your Caesar salad

Once the chicken is cooked through, reduce the heat to low, add your char siu sauce and give everything a good mix up

Cook for 1 min or until fully coated – this is your char siu chicken

Serve the char siu chicken and the ciabatta croutons on top of the Caesar salad

Garnish with the remaining grated Italian hard cheese
