Beef Keema Rice With Lime And Coriander

This Indian-style keema is small-sized but packed with protein. You'll pan fry beef mince with rice, carrots and curry spices before finishing with a squeeze of lime and fresh coriander. Smaller portion providing 2 of your 5-a-day and high in protein.

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Peel and finely slice your brown onion[s]

Heat a large, wide-based pan (preferably non-stick with a matching lid) with a very generous spray of cooking spray oil over a medium-high heat

Once hot, add the sliced onion with a pinch of salt and sugar and cook for 3 min, or until starting to soften

Once the onion has started to soften, increase the heat to high, then add your mince and cook for a further 4-5 min, breaking it up with a wooden spoon as you go

Meanwhile, top, tail, peel and chop your carrot[s] into small, bite-sized pieces

Peel (scrape the skin off with a teaspoon) and grate (or finely chop) your ginger and garlic

Add the chopped carrot, grated ginger and grated garlic to the pan and cook for 1 min

Add your beef stock mix, tomato paste and curry powder to the pan and give everything a good mix up

Stir your basmati rice into the pan

Add 160ml [250ml] [300ml] cold water to the pan and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-12 min or until the water has been absorbed, the rice is cooked through and mince is cooked through (no pink meat!)

Check and stir occasionally to prevent the rice from sticking to the bottom

Tip: Add a splash of water if the rice looks a little dry!

Meanwhile, chop your coriander finely, including the stalks (save some leaves for garnish!)

Stir the chopped coriander and juice of half your lime[s] through the cooked rice – this is your mince keema rice

Taste for seasoning, adding more salt and pepper if needed

Chop the remaining lime[s] into 1 wedge per person

Serve the mince keema rice garnished with the reserved coriander leaves and a lime wedge
