BBQ Special With Wagyu Burger, Peri Peri Chicken & Sausages
Fire up the grill. You'll sizzle juicy wagyu burgers, peri-peri chicken, and pork sausages until perfectly charred. Serve with buttery corn and creamy potato salad for an unbeatable British BBQ.

Before you begin...
Some parts of this recipe work well cooked on the BBQ. We've given you oven instructions too, just in case the British weather has other plans. As every BBQ is different, we can't give exact BBQ cooking times - but we've added a handy tip to show you what you can BBQ if you'd like.
If you choose to cook on the BBQ, always make sure meat is cooked through (no pink meat!)

Now, let's get started!
Preheat the oven to 230ºC/ 210ºC (fan)/ gas 8 and take your chicken out of the fridge, open the packet and let it air
Combine your peri peri spice mix with 1 tsp [1 1/2 tsp] [2 tsp] sugar, the juice of half your lemon[s] (you'll use the rest later!) and a drizzle of olive oil
Add a pinch of salt and pepper, then give it a good mix up – this is your peri peri marinade

Add your chicken to the marinade and give it a good mix up until fully coated – this is your marinated chicken
Add your sweetcorn cobette[s] with a little drizzle of olive oil to a large piece of tin foil
Scrunch the tin foil around the corn until tightly sealed

Add your wagyu burger patty[ies], marinated chicken, your sausages and foil parcel[s] to a baking paper-lined baking tray (or two!)
Put the tray in the oven for 20-25 min, turning the meat halfway, or until the chicken, sausages and burgers are cooked through (no pink meat!) – these are your wagyu burgers, peri peri chicken, sausages and corn on the cobs
Tip: You can cook this on the BBQ if you like!

Meanwhile, boil a kettle
Trim, then slice your spring onion[s]
Chop your waxy potatoes in half
Slice your tomato[es] into rounds
Cut the remaining lemon into 1 wedge per person

Add the chopped potatoes to a pot of plenty of boiled water and bring to the boil over a high heat
Once boiling, cook for 12-15 min or until fork-tender, then drain and return to the pot
Add the sliced spring onion and your mayo with a pinch of salt and pepper and give everything a good mix up – this is your potato salad

Once everything is ready, remove the tray from the oven and transfer the burgers, chicken and sausages to a clean chopping board to rest, discard the baking paper
Slice your brioche bun[s] in half (if required!)
Add the brioche halves to the tray[s] and return the tray[s] to the oven for 4-5 min or until warmed through
Tip: You can cook this on the BBQ if you like!

Slice the cooked sausages into rounds, on the diagonal and serve with your mustard ketchup
Top each warmed brioche base with the sliced tomatoes, a wagyu burger, your tomato ketchup and a warmed brioche lid
Serve the peri peri chicken with the corn on the cob and the potato salad to the side
Garnish with a lemon wedge
