BBQ Special With Smoky Chicken Thigh, Hot Honey Halloumi & Sausages
Nothing beats a classic BBQ. You'll char smoky chicken and mustardy sausages, before serving with sizzling halloumi and pepper skewers, smothered in a hot honey drizzle. Banging.

Before you begin...
Some parts of this recipe work well cooked on the BBQ. We've given you oven instructions too, just in case the British weather has other plans. As every BBQ is different, we can't give exact BBQ cooking times - but we've added a handy tip to show you what you can BBQ if you'd like.
If you choose to cook on the BBQ, always make sure meat is cooked through (no pink meat!)

Now, let's get started!
Preheat the oven to 230ºC/ 210ºC (fan)/ gas 8 and take your chicken out of the fridge, open the packet and let it air
Combine your ground smoked paprika with 1 tsp [1 1/2 tsp] [2 tsp] sugar, the juice of half your lemon[s] (you'll use the rest later!) and a drizzle of olive oil
Add a pinch of salt and pepper, then give it a good mix up – this is your smokey marinade
Add your chicken to the marinade and give it a good mix up until fully coated – this is your marinated chicken
Add your sweetcorn cobette[s] with a little drizzle of olive oil to a large piece of tin foil
Scrunch the tin foil around the corn until tightly sealed

Add your marinated chicken, your sausages and foil parcel[s] to a baking paper-lined baking tray (or 2!)
Put the tray[s] in the oven for 20-25 min, turning the chicken and sausages half way, or until the chicken and sausages are slightly charred and cooked through (no pink meat!) – this is your smoky chicken, sausage and corn on the cob
Tip: You can cook this on the BBQ if you like!

Meanwhile, deseed your pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into large bite-sized pieces
Chop your halloumi into large bite-sized pieces
Cut the remaining lemon into 1 wedge per person

Add the chopped halloumi to a large bowl with the chopped pepper, your chilli flakes (can't handle the heat? Go easy!) and honey
Add a little drizzle of vegetable oil and give everything a good mix up

Thread the chopped halloumi and chopped pepper evenly onto 2 skewers per person, then add them to a baking paper-lined baking tray
Put the tray in the oven for 10-12 min or until starting to soften and char – these are your hot honey halloumi & pepper kebabs
Put your ciabatta[s] in the oven for 5 min or until they're hot and crusty, then carefully slice them in half before serving
Tip: You can cook this on the BBQ if you like!

Load up the warmed ciabatta with your mustard ketchup and sausages
Serve the hot honey halloumi & pepper kebabs and smoky chicken with the corn on the cob to the side
Garnish with a lemon wedge
