BBQ Special With Peppercorn Steak, Jalapeño Hot Link Sausage & Slaw
Raise the stakes for BBQ night. You'll char peppery steak and jalapeño-cheese hot link sausages until smoky, then serve with creamy potato salad, slaw, and a duo of punchy dips. That's how it's done.

Before you begin...
Some parts of this recipe work well cooked on the BBQ. We've given you oven instructions too, just in case the British weather has other plans. As every BBQ is different, we can't give exact BBQ cooking times - but we've added a handy tip to show you what you can BBQ if you'd like.
If you choose to cook on the BBQ, always make sure meat is cooked through (no pink meat!)

Now, let's get started!
Preheat the oven to 230ºC/ 210ºC (fan)/ gas 8, then take your steak out of the fridge, open the packet and let it adjust to room temperature and boil a kettle
Chop your waxy potatoes in half, then trim and slice your spring onion[s] finely
Add the chopped potatoes to a pot of plenty of boiled water and bring to the boil over a high heat, then once boiling, cook for 12-15 min or until fork-tender, then drain and return to the pot

While the potatoes are cooking, add your hot link sausage[s] to a baking paper-lined baking tray for 11-15 min, turning half way or until golden and cooked through
Tip: You can cook this on the BBQ if you like!

Meanwhile, combine half your mayo and half your white wine vinegar (you'll use the rest later!) with your carrot & cabbage slaw mix and a pinch of salt and pepper – this is your slaw
Combine half your cracked black pepper (you'll use the rest later!) and the remaining mayo in a small bowl with the remaining white wine vinegar and a generous pinch of sugar – this is your peppercorn mayo
Combine your red chilli relish and tomato ketchup in a small bowl – this is your sweet chilli ketchup

Pat your steak[s] dry with kitchen paper, then drizzle them with vegetable oil and season with a pinch of salt and the remaining cracked black pepper on both sides – this is your peppercorn steak

Heat a large, wide-based pan (preferably non-stick) over a high heat
Once very hot, add the peppercorn steak[s] to the pan
For rare, cook for 2-3 min max on each side; for medium-rare, cook for 3-4 min on each side; for medium, cook for 4-5 min on each side
Tip: You can cook this on the BBQ if you like!

Once the steaks are cooked, transfer to a plate to rest
Once the potatoes are ready, add a small knob of butter with your sliced spring onions and a pinch of salt and pepper and give them a good mix up – this is your potato salad
Slice the rested peppercorn steak finely on a clean board

Serve the sliced peppercorn steak with the peppercorn mayo
Serve the hot link sausage[s] with the sweet chilli ketchup
Serve the potato salad and slaw to the side
