Cooking instructions

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Cut your waxy potatoes in half lengthways

Add the halved potatoes to a baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt

Give everything a good mix up and put the tray[s] in the oven for an initial 30 min

Transfer your BBQ pulled pork and any juices to an oven-proof dish

Cover with tin foil and put the dish in the oven for an initial 30 min

Add your mayo and white wine vinegar to a bowl with your shredded red cabbage and season with a generous pinch of salt

Give everything a really good mix up – this is your creamy slaw

Grate your cheddar cheese

Chop your chives finely

Once the potatoes have been cooking for 30 min, remove them from the oven and carefully turn any so that they're all cut-side up

Top the potatoes evenly with the grated cheese

Return the tray[s] to the oven for 5-7 min or until the cheese has melted and is beginning to crisp slightly – these are your loaded potatoes

Remove the pulled pork dish from the oven and discard the tin foil

Pull the BBQ pulled pork apart using two forks and mix everything through the juices, then add your BBQ sauce and tomato paste and stir it all together

Return the dish to the oven for 5-6 min further or until everything is nice and sticky – this is your BBQ pulled pork

Serve the BBQ pulled pork with the loaded potatoes and creamy slaw to the side

Sprinkle the chopped chives over the potatoes and season with a grind of black pepper
