Balsamic Tomato Chicken Ciabatta With Cheesy Sweet Potatoes

Toaster, microwave or kettle-friendly – this is dinner without the cooking. You'll layer juicy cooked chicken with balsamic sundried tomato paste, juicy fresh tomatoes and leafy greens. Finish with cheesy, buttery potatoes on the side and dig in.

Before you begin, get all your ingredients and equipment ready

Skim through these steps, then wash your fruit and veg

You can only heat your food once, then enjoy straight away

Note: Microwave ovens vary. Make sure you heat food thoroughly (even if it takes you a little longer than 10 min)

Now, let's get started!

Slice your potato[es] (skins on) into thick discs

Add the sliced potatoes to a heatproof bowl, then cover the bowl with cling film and pierce a few holes in the top with a fork

Put the bowl in the microwave for 6-8 min or until the potatoes are fork-tender

While the potatoes cook, slice your tomato[es] into rounds

Peel half your Italian hard cheese until you end up with a pile of cheese shavings

Grate the remaining Italian hard cheese

Wash your salad, then pat dry with kitchen paper

Once the potatoes are tender, remove from the microwave and add a knob of butter and the grated Italian hard cheese and season with a grind of pepper

Give everything a good mix up and set aside until serving – these are your cheesy potatoes

Add another knob of butter to a heatproof bowl and pop in the microwave for 30 secs or until melted

Once melted, add your balsamic sun-dried tomato paste with 1 tbsp [1 1/2 tbsp] [2 tbsp] warm water with a pinch of sugar and stir it all together – this is your balsamic tomato sauce

Add your cooked shredded chicken to the bowl with a generous pinch of salt and pepper and give everything a good mix up

Pop the bowl back in the microwave for 30 secs - 1 min or until warmed through – this is your balsamic tomato chicken

Slice your ciabatta[s] in half and place in the toaster for 1-2 min or until warmed through

Load the toasted ciabatta base with the tomato slices, balsamic tomato chicken and a little salad, then top with the toasted ciabatta lid

Serve the cheesy potatoes and remaining salad to the side and garnish with the Italian hard cheese shavings and a drizzle of olive oil
