Baked Coconut & Sambal Chicken Breast With Cauliflower Rice

This carb smart recipe replaces half the white rice for cauliflower rice. Let the oven do the work this time. You'll simmer chicken breast with tomato and pepper in a spicy sambal and creamy coconut stock before popping it in the oven to stew. Serve with baked rice and scatter with fresh coriander to finish. Under 600 calories.

Before you begin...

This recipe takes around 5-10 min to prep, so get your casserole dish and all your ingredients ready, then wash your fruit and veg

Note: Make sure your dish is oven-proof and safe to use on the hob. Don't have one? Start cooking in a large, wide-based pan then transfer to an oven-proof dish and cover tightly with foil

Now, let's get started!

Preheat the oven to 220°C/ 200°C (fan)/ gas 7, boil a kettle, and take your chicken out of the fridge, open the packet and let it air

Heat a large, hob-safe oven-proof casserole dish with a matching lid with a drizzle of vegetable oil over high heat

Once hot, add your diced chicken and cook for 3 min on each side or until lightly browned

Meanwhile, add your white long grain rice and cauliflower rice to an oven-proof dish with 120ml [250ml] [300ml] boiled water and stir it all together

Cover tightly with tin foil and put the dish in the oven for 30 min or until all the water is absorbed and the rice is cooked – this is your baked cauliflower rice

Chop your tomato[es] into wedges

Deseed your pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into strips

Bash your lemongrass with a rolling pin

Remove the tough outer layers of your lemongrass

Chop the softer inner core[s] finely

Once the chicken is lightly browned, add the tomato wedges and pepper strips with your ginger & garlic paste, ground turmeric and sambal (can't handle the heat? Go easy!) and 1 tbsp [1.5 tbsp] [2tbsp] flour

Cook for 30 secs or until fragrant

Chop your creamed coconut roughly (if required!)

Once fragrant, add your soy sauce, chicken stock mix, fish sauce, chopped lemongrass and the chopped creamed coconut with 200ml [260ml] [340ml] boiled water

Bring to the boil over a high heat

Once boiling, put the dish in the oven, covered, for 25 min or until the chicken is cooked through (no pink meat!) – this is your baked coconut & sambal chicken

Use this time to clear up, set the table, have a cup of tea or simply chill!

Serve the baked coconut & sambal chicken with the baked cauliflower rice to the side

Chop your coriander roughly over the dish with scissors

Dig in!
