Bacon & Egg Ciabatta With Caramelised Marmite Onions & Smoky Ketchup
Treat Dad to the ultimate breakfast of champions. You'll pile crispy bacon and a fried egg into buttery ciabatta with Marmite onions and peppery rocket. Serve with smoky ketchup for a legendary start to his day.

Skim through these steps and get all your equipment ready, then wash your fruit and veg
Once done, simply dig in or wrap up ready for your day!

Now, let's get started!
Preheat the oven to 200ºC/ 180ºC (fan), gas 6
Peel and finely slice your brown onion[s]

Heat a large, wide-based pot (preferably non-stick) with a small drizzle of olive oil and a small knob of butter over a medium heat
Once hot, add the sliced onion with a pinch of sugar
Reduce the heat to low and cook the onion for 8-10 min or until caramelised

Meanwhile, add your smoked streaky bacon to one side of a baking paper-lined baking tray
Tip: Cooking for 3 or more? Use 2 trays!
Put the tray[s] in the oven for an initial 10 min or until golden and crispy

While the bacon is in the oven, wash your salad, then pat dry with kitchen paper
Slice your ciabatta[s] in half and add (cut side up!) to a separate tray

After the bacon has had 10 min, remove the tray[s] from the oven
Crack your egg[s] onto the tray[s]
Tip: Give your egg a little shake before you crack for a perfectly centred yolk!
Put the tray[s] with the bacon & egg and the tray of ciabatta in the oven for 3-5 min or until the egg is done to your liking and the ciabatta is warmed through

Add your ground smoked paprika and a small knob of butter to a small bowl and microwave for 30 secs or until melted
Add your tomato ketchup and 2 tbsp [3 tbsp] [4 tbsp] cold water to the bowl with the melted paprika butter and whisk until thoroughly combined – this is your smoky ketchup
Stir your Marmite through your caramelised onions – these are your caramelised Marmite onions
Spread a knob of butter over the toasted ciabatta halves

To assemble, spread some of the smoky ketchup on the base on the ciabatta, add the crispy bacon, fried egg and top with the caramelised Marmite onions and salad
Serve the bacon & egg ciabatta with caramelised Marmite onions with the remaining smoky ketchup or wrap up / box up to enjoy on-the-go
