10-Min Thai Prawn Fried Rice With Greens

Before you begin...

Get all your ingredients and equipment ready

Skim through these steps

Wash your fruit and veg

Note: equipment and pan sizes vary. Ensure you cook food thoroughly (even if it takes you a little longer than 10 mins)

Now, let's get started!

Boil a kettle

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat

Meanwhile, microwave your steamed pure basmati rice according to packet instructions

Tip: if you're cooking two packets, pop them in together but increase microwave cook time accordingly!

Once hot, add the king prawns to the pan and cook for 30 sec

Add the garlic paste and ginger paste and cook for a further 2 min

Meanwhile, add the shredded kale to a colander over the sink

Pour the boiled water all over them until bright green and wilted

Add the wilted kale to the pan with the heated rice and cook for 30 sec

Add the soy saucefish sauce and the juice of 1/4 [1/2] lime and give everything a good mix up

Cook for a further 1-2 min or until everything's combined and the prawns are cooked through – this is your Thai fried prawn rice

Note: please ensure you cook your prawns thoroughly (until piping hot!) as cooking equipment varies

Meanwhile, cut the remaining lime into wedges

Slice the red chilli[es] finely

Set the Thai fried prawn rice in the centre of the table, ready to share

Garnish with the fried onions, lime wedges and sliced chilli (Can't handle the heat? Go easy!) and let everyone dig in
