Walnut Granola Yoghurt & Berry Compote With Croissants
This layered yoghurt pot is the perfect pick-me-up for Mother's Day. You'll stir diced apple through a tangy berry compote before spooning over natural yoghurt and toasted walnut granola. Rise and shine! Before you begin…
This recipe can be prepped ahead (if you like!), cover and store in the fridge overnight and enjoy within 24 hours
Once done, simply dig in or box up ready for your day!
Skim through these steps and get all your equipment ready, then wash your fruit and veg

Now, let's get started!
Simply follow the instructions on the pack to prepare your croissants. Pop them in the oven and bake until golden and delicious!
Chop your walnuts roughly

Heat a large, dry, pan over a medium heat
Once hot, add the chopped walnuts and cook for 2-3 min or until toasted and lightly golden
Tip: Watch them like a hawk to make sure they don't burn!

Once toasted, add a knob of butter with your ground cinnamon and cook for 1 min or until fragrant
Once fragrant, add your granola and half your maple syrup (you'll use the rest later!) and give everything a good mix up, then set aside to cool until serving – this is your walnut & cinnamon granola

Dice your apple[s] finely (skin on) and discard the core[s]

Combine the diced apple with your mixed berry compote in a bowl – this is your apple & berry compote mix
