Tuna Melt Quesadillas With Chipotle Salsa

Give your go-to tuna melt a Mexican-style twist. You'll load your tortilla with cheesy tuna mayo filling before toasting it in the pan till perfectly crispy. Dip it into spicy chipotle salsa for an extra kick to finish.

Before you begin...

Get all your ingredients and equipment ready

Skim through these steps, then wash your fruit and veg

Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 min)

Trim, then slice your spring onion[s]

Grate your cheddar cheese finely

Chop your tomato[es] finely

Wash your salad, then pat dry with kitchen paper

Drain your tuna

Add the drained tuna, grated cheese and sliced spring onion to a bowl with your mayo, tomato ketchup, ground smoked paprika and half your chipotle paste (save the rest for later!) and give everything a good mix up – this is your tuna filling

Divide the tuna filling between your tortillas, covering only half

Fold each tortilla over and press down firmly so you're left with 2 half moon-shaped quesadillas per person – these are your quesadillas

Heat a pan over a medium-high heat

Add 2 quesadillas to the pan and cook for 2-4 min or until slightly brown

Carefully flip the quesadillas with a spatula (you might need to use your hand for extra support) and cook for another 2-4 min on the other side – these are your tuna melt quesadillas

Tip: Cooking for 3 or more? Use 2 pans!

While the quesadillas cook, combine the chopped tomato and remaining chipotle paste (can't handle the heat? Go easy!) in a small bowl with a drizzle of olive oil and half your white wine vinegar (save the rest for later!)

Season with a little salt and a pinch of sugar and stir it all together – this is your chipotle salsa

Transfer the tuna melt quesadillas to a clean board and cut in half

Serve the tuna melt quesadillas with the chipotle salsa (not a fan of spice? Just add a little!) and salad to the side

Dress the salad with the remaining white wine vinegar
