Truffled Mushroom Pizza With Salad
Top flame-baked bases with flavours inspired by Northern Italy, like truffle-infused mushrooms, tomato sauce and melty mozzarella. Finish with shavings of Italian hard cheese and rocket to serve. Delicioso!

Olive oil, Pepper, Salt, Sugar, Water (or dietary alternatives)
Cooking instructions
Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 200°C/ 180°C (fan)/ gas 6
Put a large baking tray (or two!) in the oven to heat up (this will stop the pizza bottoms from going soggy!)
Peel and finely chop (or grate) your garlic

Add your tomato paste to a bowl with the chopped garlic and a generous pinch of salt, pepper and sugar
Add 5 tbsp [7 1/2 tbsp] [10 tbsp] cold water and give everything a good mix up – this is your tomato sauce

Drain your mozzarella, then pat and squeeze as much liquid out as you can with kitchen paper
Tear the drained mozzarella into rough, bite-sized pieces

Slice your white cup mushrooms finely and add them to a bowl
Drizzle over half of your truffle oil (save the rest for later!)
Add a generous drizzle of olive oil and a pinch of salt and stir it all together until evenly coated in the oil

Remove the heated tray[s] from the oven and add your pizza base[s]
Divide the tomato sauce between the pizza base[s] and spread it evenly all over with the back of a spoon
Top with the torn mozzarella

Add the sliced truffle coated mushrooms and put the tray[s] in the oven for 13-15 min or until the cheese has melted and the base is crisp – this is your truffled mushroom pizza

Meanwhile, peel half your Italian hard cheese until you end up with a pile of cheese shavings
Grate the remaining Italian hard cheese
Wash your salad, then pat it dry with kitchen paper

Serve the truffled mushroom pizza topped with your Italian hard cheese shavings and the grated Italian hard cheese, add the salad to the side with a drizzle of olive oil
Drizzle the remaining truffle oil all over and season with a grind of black pepper
