Three Cheese Garlic Bread Pizza With Balsamic Salad

Two crowdpleasers become one with this three cheese feast. You'll top your pizza with homemade garlic butter and serve with a balsamic, cherry tomato and baby leaf salad.

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 200°C/ 180°C (fan)/ gas 6

Put a large baking tray (or two) in the oven to heat up (this will stop the pizza bottom[s] from going soggy!)

Drain your mozzarella, then pat and squeeze as much liquid out as you can with kitchen paper then tear the drained mozzarella into rough, bite-sized pieces and grate your cheddar cheese

Add your tomato paste to a bowl with a generous pinch of salt and 1 tsp [1 1/2 tsp] [2 tsp] sugar

Add 4 tbsp [6 tbsp] [8 tbsp] cold water and stir it all together – this is your tomato base

Remove the heated tray[s] from the oven and add your pizza base[s] then spread the tomato base evenly over your pizza base[s] with the back of a spoon and top with the torn mozzarella, grated cheddar and your grated Italian hard cheese

Tip: Cooking for 2 or more? Make sure the pizza doesn't overlap on the tray[s] to avoid raw dough!

Put the tray[s] in the oven for 12-14 min or until the cheese has melted and the base is crisp

Whilst the pizza is cooking, peel and finely chop (or grate) your garlic

Chop your parsley finely, including the stalks

Add the chopped garlic and chopped parsley to a food processor and blitz until finely chopped

Tip: No food processor? Chop everything up as finely as you can and mix it together!

Add a generous knob of butter to the food processor and blitz until smooth – this is your garlic & herb butter

Chop your cherry tomatoes in half

Wash your salad, then pat dry with kitchen paper

Add the chopped cherry tomatoes and salad to a bowl and drizzle over your balsamic vinegar with a drizzle of olive oil – this is your dressed salad

Once the pizza is cooked, remove from the oven and dollop over the garlic & herb butter

Return the tray[s] to the oven for 1-2 min or until the butter has melted – this is your three cheese garlic bread pizza

Serve the three cheese garlic bread pizza with the dressed salad to the side
