Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Peel half a potato per person

Continue to peel lengths until you have a 8 thin slices of potato per person

Pat the potato slices dry with kitchen paper

Cut the remaining potato[es] (skins on) into fries

Add the fries to a baking paper-lined baking tray (or two!) with half your dried oregano (you'll use the rest later!), a drizzle of olive oil and a pinch of salt and pepper

Give everything a good mix up and put the tray[s] in the oven for 20-25 min or until golden and crisp

While the fries are cooking, line a plate with cling film and drizzle a little olive oil all over, then top with the potato slices

Pop your plate in the microwave and cook for 1-3 min or until the potatoes are slightly browned

Tip: Don't touch them, they may be hot!

Season with a small pinch of your smoked sea salt flakes (save the rest for later!) and set aside to crisp up – these are your smoked salt crisps

Boil a little water in a kettle

Chop your cherry tomatoes in half

Chop your chives finely

Peel and finely chop (or grate) your garlic

Wash your salad, then pat dry with kitchen paper

Combine the chopped garlic (not a big garlic fan? Try using less!) with your soft cheese, the remaining dried oregano, a small splash of boiled water and a pinch of salt and pepper – this is your herby soft cheese

Whisk together 80ml [120ml] [160ml] milk with your eggs, a generous pinch of pepper and the remaining smoked sea salt flakes – this is your omelette mix

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil and a knob of butter over a medium-high heat

Once the butter is melted, add enough omelette mix for 1 person

Cook for 15-20 secs or until the egg is very slightly set, then, using a spatula, gently push the mix towards the centre

Swirl the pan so the unset mix fills to the edges, repeat until all the mix is set - this is your omelette

Once set, spoon the herby soft cheese (save some if cooking for 2 or more!) down the centre of the omelette and fold the edges of the omelette into the middle

Cook for a further 1-2 min or until done to your liking – this is your herby cheese stuffed omelette

Transfer the herby cheese stuffed omelette to a plate and cover with a clean tea towel to keep warm

Repeat this process for each person with the remaining omelette mix and remaining herby soft cheese

Serve the herby cheese stuffed omelette, then crumble over the smoked salt crisps and top with the chopped chives

Serve the fries to the side with the salad and chopped tomatoes and drizzle over a little olive oil and your balsamic vinegar
