Sweet Potato & Black Bean Tacos
These tacos are all about balance. You've got creamy, smoky, dark black beans, roasted sweet potatoes, a zesty fragrant fresh coriander and lime salsa and cool creamy yoghurt. Pile them in to a soft tortilla and have your napkins at the ready!

Butter, Olive oil, Pepper, Salt, Vegetable oil (or dietary alternatives)
Cooking instructions
Instructions for 2 portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7
Cut the sweet potato[es] (skins on) in half length ways and then into strips (see picture)

Scatter the sweet potato out evenly onto a baking tray and drizzle them with vegetable oil
Season generously with salt
Put the tray in the oven for 20-25 min or until the sweet potatoes are tender and starting to crisp

Meanwhile, chop the coriander finely, including the stalks
Juice the lime[s]

Add the chopped coriander to a pestle and mortar (or a processor) with the lime juice and white wine vinegar and 1 tbsp [2 tbsp] olive oil
Grind to a rough paste - this is your salsa
Tip: add a splash of hot water from a recently boiled kettle if your salsa is too thick

Only proceed with this step once the sweet potatoes have 5 min cooking time left!
Heat a pan with 1 tbsp [2 tbsp] butter over a medium heat
Once hot, add the smoked paprika and chipotle paste
Cook for 1 min, until sizzling

Add the black beans (no need to drain) with a very large pinch of salt
Reduce the heat to low and cook for 5 min or until warmed through

Place the tortillas on a baking tray
Put them in the oven for 1 min or until warmed through

Once cooked, place the sweet potato, black beans, yoghurt and coriander lime salsa in the middle of the table ready for assembling
