Swedish Meatballs

Gousto's Swedish meatballs are hearty and delicious, swimming in a creamy gravy and served with a simple mash, green beans and a dollop of cranberry sauce. This is comfort fodder at its finest, with no need to master flat pack instructions!

Ingredients for 2 people

120g green beans

1 tbsp dried dill

300g British pork mince

1 chicken stock cube

30g dried cranberries

You'll also need

Butter, Flour, Pepper, Salt, Vegetable oil (or dietary alternatives)

Cooking instructions

Instructions for 2 portion recipe.

1.

Boil a kettle

Cut the potatoes to roughly equal size (approx. 4cm)

Add them to a pot of boiling water with a pinch of salt and boil for 15 min or until you can pierce them easily with a fork

Add 200ml (350ml) boiling water to the chicken stock cube and whisk to combine

Combine the pork mince, breadcrumbs, allspice and half of the dried dill in a bowl

Season and mix together (use your hands)

Divide the mixture into 12 (24) walnut sized pieces

Using wet hands, shape into balls

Heat a pan (that has a lid) with 1 tbsp vegetable oil

When hot, add the meatballs

Cook until coloured, moving them around the pan so they colour evenly

After about 4 mins transfer them to a plate and reserve the pan

Chop the cranberries up finely

Top and tail the green beans

Return to the pork meatball pan

Add 1 tsp (2 tsp) of butter and melt over a medium heat

Add 1 tsp (2 tsp) of flour and stir into the butter

Cook for 1 min, stirring constantly with a wooden spoon

This is your roux

Add the chicken stock, whisk to combine and simmer on a low heat for 3 min

Add the chopped cranberries and dijon to the pan

Add the meatballs back to the pan and cover with a lid

Cook for a further 5 min, or until the meatballs are cooked through

Add the green beans to a pot with 100ml (200ml) boiling water

Add a lid and boil for 4 mins, then drain

Remove the meatballs from the heat and stir through the remaining dried dill and 3 tbsp (6 tbsp) sour cream

Tip: Add more sour cream if you like it creamy!

8.

Drain the potatoes, add a knob of butter, a splash of milk and mash them with a potato masher until creamy
