Sticky Hoisin Sausage Traybake
Tuck into this Chinese-style takeaway traybake. You'll roast succulent sausages, potatoes and pepper before coating in a sticky hoisin glaze. Drizzle over sriracha mayo for a spicy-sweet finish.

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Chop your potatoes (skins on) into bite-size pieces

Peel and chop your red onion[s] into wedges

Deseed your pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into bite-sized pieces

Add your sausages to a baking tray (or two!) with the chopped potatoes, onion wedges and chopped pepper
Add a drizzle of vegetable oil and a grind of black pepper and give everything a good mix up
Put the tray[s] in the oven for an initial 25-30 min or until the sausages are cooked through (no pink meat!) and the potatoes are golden

Meanwhile, trim, then finely slice your spring onion[s]
Peel and finely chop (or grate) your garlic

Combine your hoisin sauce, toasted sesame oil, chopped garlic and half your sriracha (can't handle the heat? Go easy!) in a bowl with 1 tsp [1 1/2 tsp] [2 tsp] sugar and a small drizzle of vegetable oil – this is your hoisin glaze

Once the sausages are cooked through, remove the tray[s] from the oven, add the hoisin glaze and your toasted sesame seeds (reserve the bowl), then give everything a good mix up then return the tray[s] to the oven for 5-7 min further or until sticky and caramelised – this is your sticky hoisin sausage traybake
Wipe the reserved bowl clean and add the remaining sriracha (not a fan of spice? Just add a little!) with your mayo and 1 tsp [1 1/2 tsp] [2 tsp] cold water – this is your sriracha mayo

Serve the sticky hoisin sausage traybake topped with the sriracha mayo and sliced spring onion
