Spinach & Caramelised Onion Tortilla Pizza

This pizza is made with tortillas, and it's a share-worthy feast. To make this crispier, lighter pie you'll load it with mouthwatering toppings like caramelised onion, spinach, olives and mozzarella. Top with a fried egg for an epic, yolk-y finish.

You'll also need

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 240ºC/ 220ºC (fan)/ gas 9

Boil a kettle

Peel and finely chop (or grate) your garlic

Step 1

Add your tomato paste to a bowl with the chopped garlic and a generous pinch of salt and pepper

Add 4 tbsp [6 tbsp] [8 tbsp] cold water and give everything a good mix up – this is your tomato sauce

Drain your mozzarella, then pat and squeeze as much liquid out as you can with kitchen paper

Tear the drained mozzarella into rough, bite-sized pieces

Slice your black olives in half

Peel and finely slice your red onion[s]

Wash your spinach, then add it to a colander and pour boiled water all over it so that it starts to wilt

Rinse the wilted spinach under cold running water until it's cool

Once cool, squeeze as much water out of the spinach as you can

Add your tortillas to a baking tray (or two!) and spread the tomato sauce evenly all over them

Top the tortillas with the torn mozzarella

Add the wilted spinach, sliced olives and sliced onion

Dollop over your onion marmalade

Drizzle everything with 1 tbsp [1 1/2 tbsp] [2 tbsp] olive oil and season with a pinch of salt

Put the tray[s] in the oven for 8-10 min or until the cheese has melted and the tortillas are crispy – this is your tortilla pizza

Whilst the tortillas are cooking, heat a large, wide-based pan (preferably non-stick with a matching lid) with a drizzle of vegetable oil over a medium-low heat

Once hot, crack your egg[s] into the pan, cover with a lid and cook for 2-3 min or until done to your liking

Wash your salad, then pat it dry with kitchen paper

Add the salad to a large bowl with your balsamic vinegar and gently toss until the salad is coated

Season the fried egg[s] with a pinch of salt

Serve the tortilla pizza topped with the fried egg and the salad to the side
