Southern Fried Chicken Schnitzel With Warm Green Chilli Potato Salad

You'll also need

Sugar, Salt, Flour, Milk, Vegetable oil, Butter, Pepper, Olive oil (or dietary alternatives)

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Boil a kettle and take your chicken out of the fridge, open the packet and let it air

Slice your cucumber, then add to a large bowl with your white wine vinegar and 1 tsp [1 1/2 tsp] [2 tsp] sugar and give everything a good mix up – this is your pickled cucumber

Trim, then slice your spring onion[s] and slice your green chilli[es] finely then wash your lettuce, then pat it dry with kitchen paper and roughly shred

Chop your Jersey Royal potatoes into quarters

Add the chopped potatoes to a pot of plenty of boiled water and bring to the boil over a high heat

Once boiling, cook for 13-15 min or until fork-tender, then drain and return to the pot and keep covered

Add your chicken breast portion[s] to a chopping board

Slice through the thickest part of the chicken being careful not to cut all the way through to the other side and open it out like a book, then season with a generous pinch of salt

Cover with cling film and bash with a rolling pin until you have an even thickness – this is your butterflied chicken

Add a handful of flour to a plate

Add a splash of milk to a shallow bowl

Combine your panko breadcrumbs and southern fried seasoning with a generous pinch of salt on separate plate

Coat the butterflied chicken in the flour, tap off any excess, then add to the milk and finally press into the panko breadcrumbs firmly to evenly coat all over – this is your breaded chicken

Heat a large, wide-based pan (preferably non-stick) with a very generous drizzle of vegetable oil (enough to coat the bottom of the pan) over a medium-high heat

Once hot, add the breaded chicken and cook for 5-6 min on each side or until golden and cooked through (no pink meat!) – this is your southern fried chicken schnitzel

While the chicken is cooking, add your mayo to the cooked potatoes with a small knob of butter and a generous pinch of salt and pepper then add the chopped spring onion and sliced green chilli (can't handle the heat? Go easy!), give everything a good mix up and lightly crush with a fork – this is your warm green chilli Jersey Royal potato salad

Add the shredded lettuce to the pickled cucumber with a small drizzle of olive oil and give everything a good mix up – this is your pickled cucumber salad

Serve the southern fried chicken schnitzel and season with a pinch of salt

Serve the warm green chilli Jersey Royal potato salad and pickled cucumber salad to the side
