Smoked Mackerel Niçoise
Salade niçoise (French pronunciation: [ni' swaz]) is traditionally presented as a composed salad of tomatoes, tuna, hard-boiled eggs, olives, and anchovies, dressed with a vinaigrette. The Gousto version uses our locally sourced British mackerel and a punchy vinaigrette for a hearty and healthy dinner salad. Nice-oise!

Instructions for 2 [for 4] portion recipe.
Boil a kettle
Cut the potatoes (skins on) into large, bite-size pieces
Trim the green beans

Add the potatoes to a pot of salted boiling water and cook for 10 min or until almost fork-tender
Meanwhile, add the egg[s] to another pot of salted water, bring to the boil and cook for 8 min
Once done, cool the egg[s] by running them under cold water
Tip: cooling the eggs completely makes them easier to peel!

Meanwhile, chop the olives roughly
Cut tomato[es] into wedges, then cut them in half
Peel and finely chop (or grate) the garlic

Combine the garlic, red wine vinegar and Dijon mustard with 3 tbsp [6 tbsp] olive oil and a pinch of salt and pepper - this is your dressing

Add the green beans to the potatoes, cover and remove from the heat
Leave the pot off the heat for 4 min or until the potatoes are cooked and the beans are bright green and al dente (retaining a bite)
Drain and return the potatoes and beans back to the pot, off the heat

Add a drizzle of olive oil and a pinch of salt and pepper to the potatoes and beans and give everything a gentle mix
Peel and quarter the cooled egg[s]

Chop the little gem lettuce into bite-size pieces

Assemble your salads with a layer of lettuce, the potatoes, green beans, then scatter the olives over, followed by tomatoes and egg
Break the mackerel over the top (peel off the skin and discard), then drizzle with the dressing
Enjoy!
