Before you begin...

This recipe takes around 5-10 min to prep, so get your slow cooker and all your ingredients ready, then wash your fruit and veg

Turn on your slow cooker to high

Now, let's get started!

Boil a kettle

Heat a large, wide-based pan (preferable non-stick) over a high heat with a drizzle of olive oil

Once hot, add your sausages and cook for 3-4 min or until lightly browned all over

Meanwhile, chop your leek[s] into large chunks, then wash thoroughly to remove any grit

Chop your potato[es] (skins on) into small bite-sized pieces

Crush your garlic open by squashing them with the side of the knife then remove the skins and chop roughly

Drain and rinse your butter beans

Add the chopped leek to the pan with your tomato paste, dried thyme, chopped garlic and 1 tbsp [ 1 1/2 tbsp] [2 tbsp] flour

Add the drained butter beans and chopped potato with your chicken stock mix and 200ml [260ml] [350ml] boiled water

Give everything a good mix up and bring to the boil over a high heat and season with a pinch of salt and pepper

Once boiling, transfer everything from the pan to the slow cooker

Give everything a good mix up, then cover and cook on high for 4 hours – this is your slow cooker rustic sausage & butter bean stew

Tip: Add a splash of water if it starts to look a little dry!

Drizzle with a little olive oil and season to taste
