Slow Cooker Normandy-Style Chicken & Apple Casserole

Warm your soul with this comforting French casserole. You'll stew chicken, apples and green beans in the slow cooker with a mustard-infused sauce till rich and creamy. Serve with crusty ciabatta and sprinkle over chives to finish.

Before you begin...

This recipe takes around 5-10 min to prep, so get your slow cooker and all your ingredients ready, then wash your fruit and veg

Take your chicken out of the fridge, open the packet and let it air

Boil half a kettle

Turn on your slow cooker to high

Chop your apple[s] into wedges and discard the core[s]

Peel and chop your brown onion[s] into wedges

Crush your garlic open by squashing them with the side of a knife and remove the skins

Add the chopped apple, onion wedges and crushed garlic to the dish with your diced chicken thigh and 2 tsp [3 tsp] [4 tsp] flour

Season with a pinch of salt and pepper and give everything a good stir

Add your Chinese rice wine and stir through your wholegrain mustard and soft cheese

Sprinkle in your chicken stock mix with 80ml [90ml] [120ml] boiled water

Give everything a good mix up and cook for an initial 3 hours

Meanwhile, trim, then chop your green beans in half

After an initial 3 hours, add the chopped green beans to the dish and cook for a final hour – this is your slow cooker Normandy-style chicken & apple casserole

When the casserole is almost ready, slice your ciabatta[s] in half and place in the toaster for 1-2 min or until toasted

To serve, chop your chives roughly over the Normandy-style chicken & apple casserole with scissors, then season with a grind of black pepper

Serve the crusty ciabatta to the side

Tip: For extra indulgence spread the ciabatta with butter before dipping
