Slow Cooker Creamy Sun-Dried Tomato & Chicken Stew
Prep a creamy stew in 5 minutes, full of juicy chicken thighs, potato and tangy sun-dried tomatoes. Once the chicken and potatoes are tender, top with Italian hard cheese to serve. Under 600 calories.

Before you begin...
This recipe takes around 5-10 min to prep, so get your slow cooker and all your ingredients ready, then wash your fruit and veg
Take your chicken out of the fridge, open the packet and let it air

Boil half a kettle
Turn on your slow cooker to high

Crush your garlic clove[s] open by squashing them with the side of a knife, remove the skins and chop roughly

Chop your potatoes (skins on) into small bite-sized pieces

Add the chopped potatoes and chopped garlic to the dish with your cherry tomatoes, dried oregano, sun-dried tomatoes, tomato paste and 2 tsp [3 tsp] [4 tsp] flour and mix everything together
Add the diced chicken thigh to the dish with a generous pinch of salt

Sprinkle in your chicken stock mix and 100ml [130ml] [180ml] boiled water
Give everything a good mix up and cook for 4 hours

Once cooked, stir through your crème fraîche – this is your slow cooker creamy sun-dried tomato & chicken stew

Serve the slow cooker creamy sun-dried tomato & chicken stew with your grated Italian hard cheese sprinkled over the top
Season with a grind of black pepper and let everyone dig in!
