Before you begin...

This recipe takes around 5-10 min to prep, so get your slow cooker and all your ingredients ready, then wash your fruit and veg

Now, let's get started!

Boil a kettle

Turn on your slow cooker to high

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a high heat

Once hot, add your diced beef and cook for 2-3 min until slightly browned

Meanwhile, peel and cut your brown onion[s] into wedges

Deseed your pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into strips

Top, tail, peel and chop your carrot[s] roughly

Once slightly browned, add your cornflour, onion wedges and ground smoked paprika to the pan and give it a good mix up

Cook for 1-2 min further

Add the contents of your pan to the slow cooker

Add the pepper strips and chopped carrot with 150ml [195ml] [250ml] boiled water, your beef stock mix, tomato paste and Henderson's Relish

Season with a generous pinch of salt and pepper, then cover and cook on high for 4 hours – this is your beef goulash

Once the goulash is almost done, cut your potatoes (skins on) into small bite-sized cubes

Add the cubed potatoes to a large heatproof bowl, then cover the bowl with cling film and pierce a few holes in the top with a fork

Put the bowl in the microwave for 6-10 min or until the potatoes are fork-tender

Once cooked, add a knob of butter and a generous pinch of salt and pepper and mash until smooth – this is your mash

Serve the beef goulash with the mash to the side and dollop over your soured cream

Dig in!
