Shepherdess Pie
Veggie mince is such a versatile ingredient. It is a great source of protein, and low in calories too! In this recipe we've used it to create a vegetarian version of a British family classic; shepherd's pie.

Instructions for 2 portion recipe.
Boil a kettle and preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7
Peel and cut the potatoes into approx. 4cm chunks, add to a pot of salted, boiling water and cook for approx. 15 min or until you can pierce them easily with a fork

Once the potatoes are cooked, mash with a splash of milk and a knob of butter, season generously with salt and pepper and set aside with the lid on
Meanwhile, dissolve the stock cube(s) in 250ml (500ml) boiled water
Add the stock and allspice to the mince to soak

Peel and finely chop the onion(s), carrot(s) and garlic

Heat 1-2 tbsp olive oil in a pan over a medium-high heat
When hot, add the carrot, onion and garlic and cook for 3-4 min until the vegetables are soft but not coloured

Add the mince and tomato paste to the pan and give everything a good stir
Bring the pan to a boil and season generously with salt and pepper
Set aside until your mash is ready

Transfer the pie filling to an oven-proof dish (or individual ones)
Top with mash and grate over the Cheddar cheese
Cook in the oven for 20 min or until piping hot through and golden brown on top

Meanwhile, shred the spring greens discarding the woody stems
Tip: Roll the leaves before shredding them to make it quick and easy
Add approx. 2cm of water to a large pan with a lid on a high heat, bring to a boil and add the spring greens
Cook for 6 min or until tender, then drain

Add a large knob of butter and a grind of pepper to the spring greens and serve alongside your pie
