Sesame-Honey Baked Feta, Quinoa Salad
This simple, summery quinoa bowl has wholesome written all over it. Nutty rocket, fresh radishes and nourishing quinoa are tumbled through a lemon dressing and topped with a creamy slab of feta, baked in honey and black and white sesame seeds. *In the unlikely event of leftovers, it'll keep perfectly for tomorrow's lunch!*

Instructions for 2 portion recipe.
Preheat the oven to 200°C/ 180°C (fan)/ 400°F/ Gas 6
Add the quinoa to a pot with a matching lid, with 250ml [500ml] cold water & bring to the boil over a high heat
Once boiling, reduce the heat to low & cook, covered, for 18-20 min or until all the water has absorbed & the quinoa is tender
Once cooked, remove from the heat & leave to steam-dry until cool

Add the feta to an oiled baking tray
Drizzle with the honey and sprinkle with both the toasted and black sesame seeds
Put the tray in the oven for 15-20 min or until the feta is starting to brown

Meanwhile, peel and finely chop (or grate) the garlic

Add the chopped garlic (don't like raw garlic? Go easy!) to a large bowl with a generous drizzle of olive oil and a pinch of salt and pepper
Roll the lemon[s] with your hand on a hard surface (to release more juice!), cut in half and juice into the bowl – this is your lemon & garlic dressing

Slice the radishes finely
Trim, then slice the spring onions finely

Once the feta has browned, remove it from the oven and let cool slightly for 5 min – this is your baked honey & sesame feta

Meanwhile, wash the wild rocket and pat it dry
Add the cooled quinoa, sliced radish and rocket to the lemon & garlic dressing and give everything a good old mix up – this is your quinoa salad

Serve the baked honey & sesame feta over the quinoa salad and garnish with the sliced spring onion
