Scandinavian-Style King Prawn Skagen With Zingy Apple Salad

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Chop your potatoes (skins on) into bite-sized pieces

Add the chopped potatoes to a baking tray with a drizzle of vegetable oil and a pinch of salt

Give everything a good mix up and put the tray in the oven for an initial 15-20 min or until beginning to crisp

While the potatoes are cooking, heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat

Once hot, drain your king prawns then add them to the pan and cook for 4-5 min or until cooked through

Once done, remove the pan from the heat and set aside to cool

While the prawns are cooking, peel and finely chop your shallot[s]

Chop your dill finely, including the stalks

Combine your soured cream, chopped shallot and chopped dill in a small bowl

Add a pinch of salt and pepper and stir it all together – this is your dill sauce

Once the prawns have cooled, stir the cooked prawns through the dill sauce – this is your Scandinavian-style king prawn skagen

Slice your ciabatta[s] into 3 thin slices per person

Once the potatoes are beginning to crisp, remove the tray from the oven and add the sliced ciabatta to the tray with a drizzle of olive oil

Put the tray back in the oven for a final 5-7 min or until golden and crisp

Meanwhile, wash your lettuce, then pat it dry with kitchen paper and roughly shred

Slice your apple[s] finely, discard the core

Combine your white wine vinegar with 2 tbsp [3 tbsp] [4 tbsp] olive oil and a pinch of salt and pepper in a large bowl – this is your dressing

Add your shredded lettuce and sliced apple to the dressing and give everything a gentle mix up – this is your zingy apple salad

Top the toasted ciabatta slices with the Scandinavian-style king prawn skagen

Serve the crispy potatoes and zingy apple salad to the side
