Sausage & Roasted Veg Tray Bake
Serve up this tasty traybake in no time. You'll top potatoes and carrots with succulent sausages before roasting till golden. Pour over your rich onion gravy, bake till bubbling and tuck in.

Cooking instructions
Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Boil a kettle
Peel and chop your red onion[s] into wedges
Peel and finely chop (or grate) your garlic

Wash your leek[s] thoroughly to remove any grit from between the leaves, then top, tail and chop into large rounds

Chop your potatoes (skins on) into small bite-sized pieces
Top, tail, peel and chop your carrot[s] into thin rounds

Add the chopped carrot, chopped potato and leek rounds to a large baking tray (or two!) with the chopped garlic, onion wedges and dried thyme
Add a drizzle of olive oil, season with a pinch of salt and pepper and give everything a good mix up

Top with your sausages and put the tray[s] in the oven for an initial 30 min or until the sausages are cooked through (no pink meat!) and the veg is tender

While the sausages and veg are cooking, dissolve your chicken stock mix and onion marmalade in 100ml [130ml] [175ml] boiled water – this is your onion gravy stock

Once the sausages have browned and the veg is tender, pour your onion gravy stock evenly over the top
Return the tray[s] to the oven for a final 5 min – this is your sausage & roasted veg tray bake

Serve the sausage & roasted veg tray bake
Spoon over any remaining onion gravy stock from the tray[s]
