Saucy BBQ Cauliflower Steak, Wedges & Corn
You'll rub your cauli with paprika and cumin and smother it in our smoked barbecue sauce. Serve it with a dressed salad, potato wedges and buttery corn on the cob to get your teeth around. You'll also need
Olive oil, Pepper, Salt, Vegetable oil, Water, Butter (or dietary alternatives)

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Slice your cauliflower into 1-inch steaks, 1 per person (use the middle part as it's larger!)
Tip: Save any extra florets for another meal!
Add your ground smoked paprika, ground cumin and a generous pinch of salt to a plate and mix to combine

Brush the steaks all over with a drizzle of vegetable oil, then add them to the plate with the spices and turn them several times until evenly coated

Add the spiced cauliflower steak[s] to a baking tray (or two!) and put in oven for 30-40 min, turning once halfway, until cooked through and tender
Wash your salad, then pat it dry with kitchen paper

Cut your potatoes (skins on) into wedges
Add your sweetcorn cobettes to a piece of tin foil with a knob of butter and seal the foil tightly around them

Add the potato wedges to a baking tray with 1 tbsp [1 1/2 tbsp] [2 tbsp] vegetable oil
Season with a pinch of salt and give everything a good mix up
Add the foil-wrapped cobettes to the tray
Put the tray in the oven for 20-25 min or until the wedges are crispy and the corn is cooked

While everything's cooking, add your cider vinegar to a large bowl with 2 tbsp [3 tbsp] [4 tbsp] olive oil and a pinch of salt and pepper and stir it all together
Add your salad and gently toss – this is your dressed salad

Once the everything's almost cooked, heat a small pot over a low heat
Once hot, add your BBQ sauce and 50ml [75ml] [100ml] water
Mix it together and cook, covered, for 2-3 min or until thickened – this is your hickory smoked BBQ sauce

Serve the spiced cauliflower steak with the potato wedges, sweetcorn cobettes and dressed salad to the side
Drizzle the steaks with the hickory smoked BBQ sauce
