You'll also need

Olive oil, Pepper, Salt, Vegetable oil, Butter, Sugar (or dietary alternatives)

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Cut your potatoes (skins on) into chips

Add the chips to a baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt and pepper

Give everything a good mix up and put the tray[s] in the oven for 20-25 min or until the chips are golden and crisp

Meanwhile, remove 20g [30g] [40g] butter from the fridge to warm up for later

Zest your lemon[s] and cut into wedges

Combine the and lemon zest with your soured cream in a small bowl – this is your creamy chive dip

Add your salmon flakes to a medium bowl with half the creamy chive dip (you'll use the rest later) and a pinch of salt and pepper and give everything a good mix up

Cover the salmon mixture with cling film and put it in the fridge to set before serving – this is your salmon rillettes

Tip: For fancy presentation, press the salmon rillettes mix into individual ramekins

Slice your cucumber finely into discs

Add the cucumber discs, yellow mustard seeds and cider vinegar to a bowl with a pinch of salt and sugar

Mix everything together and set aside – this is your quick-pickled cucumber

Chop your Chives finely

Peel and grate (or finely chop) your garlic

Combine the warmed butter with the grated garlic, chopped chives and a pinch of salt and pepper – this is your garlic butter

Slice your ciabatta[s] into 3 slices per person

Add the sliced bread to a baking tray and divide the garlic butter equally between them

Put the tray in the oven for 5-6 min or until the bread is starting to brown – this is your garlic bread

Wash your salad, then pat them dry with kitchen paper

Serve the salmon rillettes with the garlic bread, quick-pickled cucumber, chips and salad to the side

Dollop the remaining creamy chive dip to the side and garnish with a lemon wedge

Drizzle a little olive oil over the baby leaf salad
