Rocket Pesto Pasta
Pesto is our go-to sauce for fresh fast food. It takes mere minutes to make, and transforms pasta in an instant. This pesto is made from rocket, which has an earthy bitterness that's offset by the sweetness of walnuts and saltiness of garlic and cheese.

Instructions for 2 portion recipe.
Boil a full kettle
Cook the pasta in a pot of boiling salted water for 8-10 min or until the pasta is cooked, stirring occasionally, then drain and set aside for step 7 (reserve 1 cup of pasta water)

Meanwhile, heat a dry wide based pan (large enough to fit the cooked pasta in) on a medium low heat
When hot, add the walnuts and toast for 3-5 min, moving them about the pan occasionally so they colour evenly
Once toasted, remove them from the heat and reserve the pan for step 7

Using a peeler, peel a few shavings of the Parmesan, and set them aside for serving

Chop the Parmesan roughly
Peel and roughly chop the garlic
Chop the basil roughly, including the stalks

Wash the rocket leaves thoroughly
Once washed, set aside a handful for serving

Add the rocket, basil, chopped Parmesan, garlic and toasted walnuts to the food processor
Add a large pinch of salt, a good grind of pepper and 4 tbsp (8 tbsp) of olive oil (extra virgin preferably)
Blitz to a paste (if you like your pesto coarse then pulse instead)

Drain the pasta, reserving a cupful of the cooking water
Transfer the pasta to the reserved pan
Stir the pesto through the pasta, adding a little pasta water if the pesto is too thick
Taste the sauce and adjust seasoning if needed

Serve the pasta with the remaining rocket and Parmesan shavings over the top and an extra drizzle of olive oil (if desired)
