Roasted Grape, Bacon & Cracked Freekeh Bowl
For this wholesome bowlful, you'll toss balsamic-roasted grapes, smoky British bacon and roasted Tenderstem broccoli with fibre-packed cracked freekeh. Serve on peppery rocket with tangy mustard dressing.

Instructions for 2 [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Chop the grapes and Tenderstem broccoli in half

Rinse the freekeh, then add it to a pot with plenty of cold water and bring to the boil over a high heat
Cook for 20-25 min or until tender but with a bite, then drain and return to the pot

Add the chopped grapes and Tenderstem broccoli to a baking tray (use tin foil to avoid mess!)
Drizzle half the balsamic vinegar over the grapes and drizzle the Tenderstem broccoli with olive oil
Season both with a pinch of salt and put the tray in the oven for 12-15 min or until the broccoli has lightly charred

Add the smoked streaky bacon to a separate baking tray
Put the tray in the oven for 15-20 min or until golden and crispy

Whilst the freekeh is cooking, combine the remaining balsamic vinegar with half [all] the wholegrain mustard, 3 tbsp [6 tbsp] olive oil, 1/2 tsp [1 tsp] sugar and a grind of black pepper
Tip: Cooking for 2? Save the remaining wholegrain mustard for another recipe!
Give everything a good mix up – this is your balsamic-mustard dressing

Add the roasted Tenderstem broccoli to the pot with the drained freekeh
Season with a generous pinch of salt and pepper, add a drizzle of olive oil and mix everything together

Remove the smoked streaky bacon from the oven and chop it roughly with a sharp knife
Wash the rocket, then pat it dry with kitchen paper

Serve the broccoli & freekeh over the rocket, then top with the chopped bacon and roasted grapes
Drizzle the balsamic-mustard dressing all over and season with a generous grind of pepper
