RE:NOURISH Tomato & Basil Soup With Cheddar & Pesto Toastie

Before you begin...
Get all your ingredients and equipment ready
Skim through these steps, then wash your fruit and veg
Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 min)
Grate your cheddar cheese
Add the grated cheese to a medium bowl with your traditional Italian pesto
Season with a pinch of salt and pepper
Give everything a good mix up until completely combined – this is your cheddar & pesto filling
Slice your ciabatta[s] in half
Divide the cheddar & pesto filling between the ciabatta base[s] and spread almost to the edges, leaving a small border
Top with a ciabatta lid – this is your cheddar & pesto toastie[s]
Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat
Once hot, add the cheddar & pesto toastie[s] and cover with a smaller pan
Add a heavy weight (e.g. several tins) to the top pan and cook for 3-4 min per side, checking occasionally or until the ciabatta is golden and the cheese has melted
Tip: Cooking for 5? Use 2 pans or you may need to do this in batches!
