RE:NOURISH Roasted Carrot & Ginger Soup With Cheesy Curried Pittas

Before you begin...
Get all your ingredients and equipment ready
Skim through these steps, then wash your fruit and veg
Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 min)
Grate your cheddar cheese
Trim, then slice your spring onion[s]
Add the grated cheese to a medium bowl with your mayo
Add your curry powder and most of the sliced spring onion (save some for garnish!)
Give everything a good mix up until completely combined – this is your cheesy curried filling
Slice open the top of your sourdough pitta[s]
Fill your sliced pitta with the cheesy curried filling
Close the pitta and press down firmly – these are your cheesy curried pitta[s]
Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat
Once hot, add the cheesy curried pitta[s] and cover with a smaller pan
Add a heavy weight (e.g. several tins) to the top pan and cook for 3-4 min per side, checking occasionally or until the pitta is golden and the cheese has melted
Tip: Cooking for 5? Use 2 pans or you may need to do this in batches!
Heat your RE:NOURISH carrot soup according to the pack instructions
Serve the RE:NOURISH carrot soup in bowls with the cheesy curried pitta[s] to the side
Garnish the soup with the remaining sliced spring onion
