Before you begin...
Get all your ingredients and equipment ready
Skim through these steps, then wash your fruit and veg
Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 min)
Cut your sourdough pitta[s] into small pieces
Heat a large, wide-based pan (preferably non-stick) over a medium-high heat with enough olive oil to cover the base
Once hot, add the pitta chips and cook for 3-4 min or until golden and crisp
Once golden, add your dried oregano and pine kernel & seed mix to the pan and cook for 30 secs or until fragrant
Once fragrant, transfer the crispy pitta pieces and toasted seeds to a large bowl with your grated Italian hard cheese, roasted garlic paste and crispy onions
Season with a generous pinch of salt and pepper and stir it all together – this is your garlic & herb pitta crunch
Meanwhile, heat your RE:NOURISH broccoli soup according to the pack instructions
Serve the heated RE:NOURISH broccoli soup and top with the garlic & herb pitta crunch
