Rainbow Peanut Chicken Curry With Broccoli Rice

This chicken curry is so quick, it's nuts! You'll sauté pre-diced chicken and chopped rainbow veg, before adding fragrant spices and a rich peanut stock. Serve with broccoli rice and a sprinkle of roasted peanuts.

Ingredients for 2 people

32g tomato paste

300g broccoli brown rice
300g broccoli brown rice
300g rainbow veg mix
300g rainbow veg mix
26g smooth peanut butter
26g smooth peanut butter
250g British diced chicken breast
250g British diced chicken breast
1 tbsp curry powder
1 tbsp curry powder

Vegetable oil, Salt (or dietary alternatives)

Cooking instructions

Instructions for 2 portion recipe.

Boil half a kettle

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a high heat

Once hot, add the diced chicken breast and the rainbow veg mix with a pinch of salt and cook for 4-5 min or until the chicken has started to brown

Meanwhile, add the broccoli brown rice to a large, heatproof bowl and put the bowl in the microwave for 3-4 min or until piping hot

Dissolve the tomato paste, chicken stock mix and peanut butter in 150ml [300ml] boiling water – this is your peanut stock

Once the chicken has started to brown, add the curry powder and cook for 30 secs or until fragrant

Once fragrant, add the peanut stock and cook for 2-3 min or until thickened and the chicken is cooked through (no pink meat!) – this is your rainbow peanut chicken curry

Serve the rainbow peanut chicken curry with the broccoli rice to the side

Garnish with the roasted peanuts
