Pulled Pork Birria-Style Baguette With Wedges
Grab your napkins, this birria-style sandwich is a saucy one. You'll load tender chipotle-style pulled pork into your baguette with coriander and onion salsa and feta. Serve up with wedges, salad and extra chipotle sauce for dipping.

Before you begin...
This recipe takes around 5-10 min to prep, so get your oven-proof dish and all your ingredients ready, then wash your fruit and veg

Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Cut your potatoes (skins on) into wedges
Add the wedges to a baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt and pepper
Give everything a good mix up and put the tray[s] in the oven for 25-30 min or until golden and crisp

Chop your coriander roughly
Peel and finely dice half of your brown onion[s]
Cut the remaining onion into wedges
Combine the diced onion and chopped coriander with a squeeze of lime juice – this is your coriander & onion salsa

Transfer your BBQ pulled pork and any juices to an oven-proof dish with your chipotle paste, tomato paste, beef stock mix, dried oregano and the onion wedges
Cover with tin foil and put the dish in the oven for an initial 30 min

Use this time to clear up, set the table, have a cup of tea or simply chill!

Wash your salad, then pat dry with kitchen paper
Once everything is nearly ready, remove the baking tray[s] from the oven
Add your baguette[s] to the baking tray[s] and return the tray[s] to the oven for 2-3 min or until warmed through and crusty

Once the pork is done, remove the dish with the pulled pork from the oven and discard the tin foil
Pull the BBQ pulled pork apart using two forks (save all the cooking liquid!) – this is your birria-style pork & birria-style sauce
Return the dish to the oven for 5-6 min further or until the pork has started to crisp
Cut the remaining lime into 1 wedge per person

Slice the warmed baguette[s] in half (without cutting all the way through) and open it out like a book
Fill the sliced baguette[s] with your birria-style pork and coriander & onion salsa and crumble your feta on top
Serve the wedges and salad to the side
Garnish with a lime wedge and serve the birria-style sauce in a pot for dipping!
