Pulled BBQ Chicken Burger With Red Gem Salad

Nothing beats BBQ flavours, pulled off perfectly in this easy chicken burger. You'll simply cover British chicken thighs with homemade BBQ sauce and pop in the oven till it's all deliciously sticky and tender. Serve in a warm brioche roll with chips and a red gem salad drizzled with creamy dressing on the side.

Ingredients for 2 people

2 tomato ketchup sachets (30ml)

You'll also need

Pepper, Salt, Sugar, Vegetable oil (or dietary alternatives)

Cooking instructions

Instructions for 2 portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Boil a kettle

Cut the potatoes into chips

Add the chips to a baking tray with a generous drizzle of vegetable oil

Season with a pinch of salt and put the tray in the oven for 30-35 min or until golden and crisp

Meanwhile, dissolve the chicken stock cube[s] in 100ml [275ml] boiled water

Add the tomato pastetomato ketchuphoisin sauceDijon mustardHenderson's Relish and 1 tbsp [2 tbsp] sugar

Season with a generous grind of black pepper and give everything a good mix up – this is your bbq sauce

Add the chicken thighs to an oven-proof dish and cover them with the bbq sauce 

Put the dish in the oven for 25-30 min or until the chicken is cooked through (no pink meat!)

Meanwhile, combine the mayonnaise and cider vinegar with a generous pinch of salt and pepper in a small bowl – this is your creamy dressing

Cut the red gem[s] into quarters, lengthways

Use the remaining time to clear up, set the table, have a cup of tea or simply chill!

Once everything's done, remove the bbq chicken from the oven

Add the brioche rolls to a baking tray and put the tray in the oven for 3-4 min or until warmed through

Transfer the cooked chicken to a clean board and shred it apart, using two forks – this technique is known as 'pulling'

Return the shredded chicken to the dish, season with a pinch of salt and give everything a good mix up – this is your pulled bbq chicken

Cut the warmed brioche rolls in half

Serve the brioche rolls filled with the pulled bbq chicken with the red gem wedges and chips to the side

Drizzle the creamy dressing over the red gem wedges
