Prosciutto Caprese Baguette With Buttery Basil Potatoes
Plate up the flavours of Italy with this hearty Mediterranean-style sarnie. You'll stuff your baguette with creamy mozzarella, prosciutto, sweet tomatoes and a speedy rocket and basil salad. Serve up with buttery basil new potatoes and dinner's on the table in 10.

Before you begin...
Get all your ingredients and equipment ready
Skim through these steps, then wash your fruit and veg
Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 min)

Preheat the oven to 200°C/ 180°C (fan)/ gas 6
Add your waxy potatoes to a heatproof bowl, then cover the bowl with cling film and pierce a few holes in the top with a fork
Put the bowl in the microwave for 6-8 min or until the potatoes are fork-tender

Slice your tomato[es] into rounds

Drain your mozzarella and tear it into rough, bite-sized pieces

Chop your basil roughly, including the stalks
Wash your salad then pat dry with kitchen paper
Combine half your chopped basil (you'll use the rest later!) and salad in a small bowl
Add a drizzle of olive oil and your balsamic vinegar and toss – this is your dressed salad

Add your baguette[s] to a baking tray in the oven for 2-3 min or until warmed through and crusty
Slice each warmed baguette in half (without cutting all the way through) and open it out like a book

Once the potatoes are fork-tender, add a generous knob of butter and the remaining chopped basil with pinch of salt and pepper and crush lightly with a fork – these are your crushed buttery basil potatoes
Tip: Just crush them gently, or they'll turn to mash!

To assemble, divide the sliced prosciutto, sliced tomato, mozzarella and dressed salad evenly between the baguette[s]
Finish with a drizzle of olive oil and a generous pinch of salt and pepper
Serve the buttery basil potatoes to the side
