Pork Loin With Roast Apple & Potatoes And Onion Gravy
You won't be able to resist this comforting classic. You'll sizzle pork steaks before plating up with oven-roasted potato and apple wedges. Finish with buttery greens on the side and smother everything in lashings of gravy.

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7 and before you start cooking, take your steak out of the fridge, open the packet and let it adjust to room temperature
Chop your potatoes (skins on) into bite-sized pieces
Peel and chop your apple[s] into wedges, then peel and finely slice half your red onion[s]
Chop the remaining red onion into wedges

Add the chopped potatoes, apple wedges and onion wedges to a baking paper-lined baking tray (or two!)
Add a drizzle of vegetable oil with a pinch of salt and pepper and give everything a good mix up
Put the tray[s] in the oven for 20-25 min or until the potatoes are golden and crisp and the apples are softened – this is your roast apple & potatoes

Heat a large, wide-based pan (preferably non-stick) with a small knob of butter over a medium-high heat
Once hot, add the sliced onion with a pinch of salt and sugar and give everything a good mix up
Reduce the heat to low and cook the onion for 7-8 min or until softened and caramelised

While the onion is cooking, boil half a kettle
Peel and chop (or grate!) your garlic
Wash, then rip the leaves off your spring greens, discard the tough stalks, then layer the leaves over each other, roll them up and slice into thin strips

Add the sliced spring greens to a large piece of tin foil with the chopped garlic, a pinch of salt and pepper, a knob of butter and 2 tbsp [3 tbsp] [4 tbsp] cold water
Scrunch the edges of the foil to form a sealed parcel[s] and add to a baking tray
Put the tray in the oven for 10-12 min or until the greens are tender
Tip: Cooking for 3 or more? Make 2 separate parcels!

Pat your pork loin steak[s] dry with kitchen paper, then rub them with a drizzle of vegetable oil and season both sides with a pinch of salt and pepper
Heat a large, wide-based pan (preferably non-stick) over a medium-high heat and once hot, add the seasoned steak[s] and cook for 5-6 min on each side or until they're browned and cooked through (no pink meat!)
Once done, transfer the cooked steak[s] to a clean chopping board, cover with a tea towel and leave them to rest for 2 min

While the steak[s] are cooking, dissolve your chicken stock mix and marmite in 250ml [325ml] [450ml] boiled water – this is your chicken stock
Once the onion has caramelised, add 2 tsp [3 tsp] [4 tsp] flour to the pan and cook for 30 secs
Add the chicken stock to the pan and bring to the boil over a high heat, then once boiling, reduce the heat to medium and cook for a further 3-4 min or until thickened to a gravy-like consistency – this is your onion gravy

Slice the rested pork steak finely and serve with the roast apple & potatoes and spring greens to the side
Pour the onion gravy all over
