Pork Loin Steak With Root Veg Mash, Garlicky Greens And Gravy
Feed the need for speed with this 20-minute dinner. You'll pan-fry pork loin steak before serving with a creamy carrot and butternut squash mash and garlicky spring greens. Smother the lot in homemade gravy and dig in. High in protein. Protein contributes to a growth in muscle mass.

Instructions for 2 [for 3] [for 4] portion recipe.
Before you start cooking, take your steak out of the fridge, open the packet and let it adjust to room temperature, then boil a full kettle
Chop your potato[es] (skin on) into bite-sized pieces
Top, tail and chop your carrot[s] into bite-sized pieces

Add the chopped potato, chopped carrot and your butternut squash cubes to a pot with plenty of boiled water and a generous pinch of salt and bring to the boil over a high heat
Once boiling, reduce the heat to medium and cook for 12-15 min or until fork-tender
Once done, drain and return to the pot to steam dry

Meanwhile, heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat
Pat your pork loin steak[s] dry with kitchen paper
Once hot, add the steak[s] with a pinch of salt and pepper and cook for 5-6 min on each side or until browned and cooked through (no pink meat!)
Once done, transfer the cooked steak[s] to a clean chopping board (reserve the pan!), cover with a clean tea towel and leave to rest for 2 min

Peel and finely chop (or grate) your garlic
Combine the chopped garlic with a small knob of butter in a bowl – this is your garlic butter

Reboil half a kettle
Return the drained potatoes & veg to a low heat with a splash of milk and a pinch of salt and pepper
Mash until smooth – this is your root veg mash

Wash your spring greens then pat it dry with kitchen paper
Rip the leaves off the spring greens, discard the tough stalks, then layer the leaves over each other, roll them up and slice into thin strips then add to a heatproof bowl
Cover the bowl with cling film and pierce a few holes in the top, put the bowl in the microwave and cook for 3-4 min or until the spring greens are tender
Once cooked, add the garlic butter with a pinch of salt and pepper and toss – these are your garlicky greens

Combine your gravy base with 125ml [200ml] [250ml] boiled water and whisk thoroughly
Return the reserved pan to a medium-high heat
Once hot, pour in the gravy base and cook for 2-3 min, stirring regularly, or until thickened – this is your gravy

Serve the cooked pork loin steak[s] with the root veg mash and garlicky greens to the side
Pour over the gravy
