Pork Al Pastor Tacos With Pineapple Salsa

Brought over by Lebanese immigrants in the 20th century, this richly marinated pork taco is a classic in Mexico City. To make it at home, you'll layer spiced pork belly in soft tortillas, and top with a spicy pineapple salsa to serve. Buen provecho!

Cooking instructions

Preheat the oven to 200°C/180°C (fan)/ Gas 6

Slice your pork belly into strips

Add the pork strips to a bowl with your ground cumin, ground smoked paprika and a generous pinch of salt and give everything a good mix up

Add the pork belly strips to a baking paper-lined baking tray (or two!) and put the tray[s] in the oven for 25-30 min or until crispy and cooked through (no pink meat!)

Whilst the pork is in the oven, drain your pineapple and slice into rough bite-sized pieces

Peel and finely dice your red onion[s]

Combine the chopped pineapple and diced red onion in a bowl with a pinch of salt and drizzle of olive oil and give everything a good mix up

Add your cayenne pepper (can't handle the heat? Go easy!), tomato paste, red wine vinegar, 1 tbsp [2 tbsp] [3 tbsp] water and a pinch of salt to a separate bowl and give everything a good mix up – this is your spicy salsa

Add your tortillas to a baking tray (or two!) and put the tray[s] in the oven for 1-2 min or until warmed through

Once cooked, chop the pork belly into small chunks – this is your pork al pastor

Pile the tortillas with the pork al pastor, pineapple & red onion and spicy salsa

Tear your coriander all over
