Pigs In Blankets Bao With Brussels Sprout Hot Sauce
This is the real Christmas MVP. These festive baos are stuffed with pigs in blankets and sprout and carrot slaw. Top with a bold brussels sprout hot sauce and plate up with some crispy chips.
Ingredients for 2 people

You'll also need
Pepper, Salt, Vegetable oil (or dietary alternatives)
Cooking instructions
Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Cut your potatoes (skins on) into chips
Add the chips to a to a baking paper-lined tray with a drizzle of vegetable oil and a pinch of salt and pepper
Give everything a good mix up and put the tray in the oven for 20-25 min or until golden and crisp
Add your pigs in blankets to a separate baking paper-lined tray (or two!)
Put the tray[s] in the oven for 15-18 mins or until cooked through
Trim the ends from your Brussels sprouts, then finely slice
Top, tail, peel and grate your carrot[s]
Chop your chives finely
Add the sliced sprouts to a bowl with your white wine vinegar
Season with a pinch of salt and pepper and give everything a good mix up
Add your mayo, roasted garlic paste, grated carrot and most of your chopped chives (save the rest for garnish!) to the bowl
Give everything a good mix up – this is your Brussels Sprout & carrot slaw
Pierce your bao bun packet[s] with a few holes and microwave for 1-2 min
To build your buns, fill each bao bun with some of the Brussels Sprout & carrot slaw, the cooked pigs in blankets, top with your Brussels Sprout hot sauce (can't handle the heat? Go easy!) and the remaining chopped chives – these are your pigs in blanket bao buns
Serve the pigs in blanket bao buns with the chips and remaining Brussels Sprout & carrot slaw to the side
