Pepperoni Pizza Baked Potatoes And Cheat's Caesar Salad
A comforting jacket potato that tastes like a pepperoni pizza, what's not to love? Serve this fusion of foodie faves alongside a cheat's Caesar salad packed with rocket, lettuce, homemade croutons and a creamy, tangy dressing.

Preheat the oven to 240ºC/ 220ºC (fan)/ gas 9
Prick your potatoes a few times with a sharp knife and add them to a large heatproof bowl covered with cling film
Put the potatoes in the microwave for 6 min
Meanwhile, peel and finely chop (or grate) your garlic

Whilst the potatoes are in the microwave, combine the grated garlic, tomato paste, most of your dried oregano (you'll use the rest later!), 1/2 tsp [3/4 tsp] [1 tsp] sugar and 4 tbsp [6 tbsp] [8 tbsp] cold water
Season with a pinch of salt and pepper – this is your tomato base
Once the potatoes are done, transfer them to one side of a baking paper-lined baking tray[s] (reserve the the bowl) with a drizzle of olive oil, then put the potatoes in the oven for an initial 20 min or until golden

Whilst the potatoes are cooking, tear your ciabatta[s] roughly into bite-sized pieces
Add the ciabatta pieces to a bowl with a drizzle of olive oil and a pinch of salt and pepper and give everything a good mix up – these are your croutons

Drain your mozzarella, then pat and squeeze as much liquid out as you can with kitchen paper
Tear the drained mozzarella into rough, bite-sized pieces
Grate your Italian hard cheese
Add your cider vinegar to the reserved bowl with your mayo, Dijon mustard, most of the grated Italian hard cheese (save some for garnish!), 2 tbsp [3 tbsp] [4 tbsp] olive oil and a pinch of pepper and whisk everything together – this is your cheat's Caesar dressing

Once the potatoes have had an initial 20 min, remove the baking tray[s] from the oven and carefully cut the potatoes in half, then press down hard with a spatula to flatten them – these are your baked potatoes
Fluff the inside with a fork and add a little butter with a large pinch of salt

Divide the tomato base equally between the baked potatoes, then top with the torn mozzarella and sliced pepperoni
Add the croutons to the other side of the baking tray[s] and return the tray[s] to the oven for 5-6 min or until the croutons are golden and the cheese has melted – these are your pepperoni pizza baked potatoes

Whilst everything is in the oven, chop your chives finely, then wash your lettuce and salad and pat dry with kitchen paper
Remove 3 leaves per person from the lettuce and shred the inner core
Add the lettuce leaves and shredded lettuce to the dressing with the salad and the chopped chives
Once ready, add the toasted croutons to the salad and toss together until everything is coated in the dressing – this is your cheat's Caesar salad

Serve the pepperoni pizza baked potatoes with the cheat's Caesar salad to the side
Sprinkle the remaining oregano over the baked potatoes and top the salad with the remaining grated Italian hard cheese
