Oven Baked Fable Mushroom Chilli
Plant get enough of chilli? Try this. You'll stew black beans and charred fable mushrooms in the oven with smoky spices for this meat-free masterpiece. Serve with steamed rice

Before you begin...
This recipe takes around 5-10 min to prep, so get your casserole dish and all your ingredients ready, then wash your fruit and veg
Note: Make sure your dish is oven-proof and safe to use on the hob. Don't have one? Start cooking in a large, wide-based pan then transfer to an oven-proof dish

Now, let's get started!
Preheat the oven to 220°C/ 200°C (fan)/ gas 7 and boil a kettle
Add your white long grain rice to an oven-proof dish with 300ml [390ml] [600ml] boiled water then cover tightly with tin foil and put in the oven for 30 min or until all the water is absorbed and the rice is cooked – this is your baked rice
Once cooked, remove from the heat and keep covered until serving

While the rice cooks, heat a large, wide-based hob-safe oven-proof casserole dish with a drizzle of vegetable oil over a high heat
Once hot, add your Fable pulled mushrooms to the dish and cook for 30 secs or until beginning to brown

Meanwhile, drain and rinse your black beans

Once beginning to brown, add your tomato paste to the dish with your ground smoked paprika, ground cumin, dried oregano and chilli flakes (can't handle the heat? Go easy!)
Cook for 30 secs or until fragrant

Once fragrant, add the drained black beans, chopped tomatoes, vegetable stock mix, 300ml [390ml] [510ml] boiled water, 1 tsp [1 1/2 tsp] [2 tsp] sugar and a pinch of salt and pepper and bring to a boil over a high heat
Once boiling, put the dish in the oven, uncovered, for 25-30 min or until the sauce has thickened – this is your Fable mushroom chilli

Use this time to clear up, set the table, have a cup of tea or simply chill!

Serve the Fable mushroom chilli on top of the baked rice and garnish by chopping your coriander roughly over the top with scissors
